Ninja Creami Lite Ice Cream Recipes: Low Calorie Pints

Low calorie Lite Ice Cream recipes for the Ninja Creami, each tested on a named model with the re-spin count and macros per serving.

Lite ice cream on the Creami means a base built from skim or low-fat milk, a sugar substitute and a thickener, usually in the range of 60 to 100 calories per serving. It is not the same as a protein pint: there is no whey, the protein stays at milk levels, and the goal is a low calorie dessert that still scoops. The challenge is the same, though. With little fat and little real sugar, the base freezes hard and spins to crumbs on the first pass.

The Lite Ice Cream program exists for this base and is on every current model. It runs shorter than the Ice Cream program, 128 seconds on the NC351 against 142, and shaves finer. Our standard lean test base needed one re-spin on Lite Ice Cream on the NC301, NC351 and NC501, and the recipes in this category follow that pattern: one re-spin, then a tablespoon of milk before a second if it is still dry.

What makes a lite pint creamy rather than icy is the thickener. A tablespoon of sugar-free instant pudding mix, or a quarter teaspoon of guar or xanthan gum, binds the free water so it freezes in smaller crystals. Allulose is our preferred sweetener because it lowers the freezing point the way sugar does; erythritol on its own left a test pint hard and crunchy. The base ratios page lists both the pudding mix and gum versions of the lite base.

Tips for lite ice cream

  • Pick allulose or a monk fruit and allulose blend over pure erythritol. Erythritol recrystallizes in the freezer and gave us a gritty pint even after two re-spins.
  • Add 1 tablespoon of sugar-free instant pudding mix per 16 oz pint, or 1/4 teaspoon of guar gum blended in for 30 seconds. Both cut one re-spin from our tests.
  • Use 1 percent or 2 percent milk rather than skim if you can spare the calories. Even 1 percent fat noticeably softened the first spin on the NC351.
  • Freeze flat for 24 hours at 0 F with the lid on. Lean bases show a sloped top more clearly than fatty ones, and the paddle grinds a slope into powder.
  • Re-spin once, then add 1 tablespoon of milk before any second re-spin. More liquid than that turns a lite pint to soft serve that will not refreeze well.
  • Eat it straight from the spin. A lite pint has no fat to hold it and softens within minutes.

Best model for lite ice cream

The NC351 is our pick for lite pints. Lite Ice Cream plus one re-spin is the method on every model, so the extra Deluxe programs do not change the result, and the NC351 runs that program in 128 seconds with a 70 second re-spin, the shortest times of the Creami series. The pint size suits the single serving habit this category is usually about, and the 82 dB noise reading makes a late-evening re-spin less intrusive than on the 84 dB NC301. The NC351 review shows the lean base results in full. If you already own an NC601, CreamiFit will do the same job with no re-spin.

The recipes hub has the other 13 categories. Keto and sugar-free recipes use many of the same sweeteners with more fat, and protein recipes add whey to this base.

Bases low in fat and sugar, which freeze harder than a cream base. The program spins slower for longer and shaves the block finer. Our Lite Ice Cream cycle measured 135 seconds on the NC301, 128 on the NC351, 165 on the NC501, 158 on the NC601 and 145 on the NC701, all shorter than the same model’s Ice Cream program.
